Wow...it's delicious! I think we'll be making it every year now...and maybe in between just because! Karate Kid ate two large pieces and asked if I'd make it every day! I will definitely double it and use a 9x13 pan next time.
Here it is:
1 1/4 cup whole wheat pastry flour
1/4 cup barley flour
1 1/4 tsp baking soda
1/8 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 cup applesauce (plain, unsweetened...homemade is even better!)
1/4 cup oil (I used expeller-pressed coconut oil)
1/2 to 2/3 cup honey
1 egg
Combine all dry ingredients, in a separate bowl combine all wet ingredients. Now combine the two and pour into a greased 8 or 9 inch pan. Bake in a preheated oven at 325 for 30-35 minutes. Serve warm with an extra dollop of applesauce and sprinkle of cinnamon, or topped with whipped cream. It's also good as a snack warmed with a little butter.
We enjoyed ours plain! Also, I suspect (though I haven't tried) that if you don't have any barley, you could use all wheat flour.

Love that this uses natural sweeteners instead of sugar. What else did you make for Rash Hashanah?
